Ingredients

for 2 servings

  • 1 cup uncooked white rice
  • 1 cup water
  • 2 tablespoons soy sauce
  • ¼ cup diced white onion
  • ½ cup diced carrot
  • ¼ cup corn
  • ¼ cup diced Chinese sausage
  • ⅓ cup diced raw shrimp
  • 1 roma tomato, diced
  • ⅓ cup chopped snap peas
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon sriracha, optional
  • 1 tablespoon teriyaki sauce, optional
  • 1 tablespoon furikake, optional
  • 1 (8-ounce) pack seaweed strip, optional

Preparation

  1. Place the rice in a rice cooking pot. Add some water to the pot, and rinse the rice in the water. Drain the rice in a strainer. Repeat the process about three times, or until the water runs clear.
  2. Place the rice pot in a rice cooker, and add the 1 cup water and soy sauce.
  3. Layer on the following ingredients in this order: onion, carrot, corn, sausage, shrimp, tomato, and snap peas. Sprinkle with the salt and pepper.
  4. Cook on your cooker’s regular white rice setting.
  5. Once the rice cooker is done, immediately top the mixture with the egg, and stir to incorporate with the rice. This should cook the egg very quickly! (Note: This may not fully cook the egg, and consuming raw egg may increase your chance of a foodborne illness. If you’d like to fully cook the egg, close the lid after incorporating the egg, and let the heat steam it for 10 minutes.)
  6. If desired, top with Sriracha, teriyaki sauce, and furikake. If desired, serve with seaweed sheets.
