Ingredients

for 2 servings

Rice:

  • 1 cup rice
  • 1 cup bone broth
  • 1 teaspoon ginger paste
  • 1 teaspoon soy sauce
  • ½ teaspoon dashi powder
  • ½ cup chopped Chinese sausage
  • 1 cup assorted fresh mushrooms
  • 2 scallions, sliced
  • furikake, for garnish

Miso sauce:

  • 1 tablespoon white miso
  • 1 tablespoon rice vinegar
  • ½ tablespoon sugar
  • 2 tablespoons olive oil

Preparation

  1. To wash the rice, place it in the bowl of the rice cooker and cover with cold water. Gently swirl the rice with your hand and pour off the starchy water. Repeat this process until the water is nearly clear, at least three times. Drain completely.
  2. Add the broth to the bowl of the rice cooker with the washed rice. Mix in the ginger paste, soy sauce, and dashi powder. Layer on the Chinese sausage, mushrooms, and scallions on top.
  3. Cook on the regular rice cooker setting.
  4. While the rice is cooking, prepare the miso sauce by mixing together the miso, rice vinegar, sugar, and olive oil in a small bowl.
  5. Once the rice is done, top it with the miso sauce and sprinkle with furikake.
