- 2 large strawberries
- 1 cup chocolate chips of choice (I used dark chocolate)
- 1 tablespoon olive oil or coconut oil
- 2 cups popped quinoa

Preparation
- Line an 8 x 4-inch pan with parchment paper, and set aside.
- Cut the top pointed tips off the berries (about ½ inch), and discard. Cut the strawberries into ⅓-inch-thick slices (you want 8–10 slices total). Set aside.
- Heat a pan over medium-low. Add the chocolate chips and oil. Cook, stirring often to encourage even melting, until fully melted, about 3 minutes. Remove from heat.
- Add the popped quinoa to the chocolate mixture, stirring until fully combined. Pour the mixture into the parchment-lined pan. Using a spatula, gently spread the mixture to flatten and smooth. Arrange the strawberry slices on top.
- Freeze the mixture for about 10 minutes, until the chocolate is completely set and solid. Remove from the freezer, and slice evenly into 8 bars. Store bars in the refrigerator for up to 2 days.
