- ¼ onion, finely chopped
- 2 cloves garlic, crushed
- ½ cup baby plum tomatoes (100 g), halved, or regular tomatoes, chopped into small pieces
- ⅓ cup chopped fresh basil (15 g), plus a few sprigs to decorate
- ⅓ cup Chopped fresh parsley (15 g)
- 5 oz linguine (150 g), or spaghetti
- salt, to taste
- pepper, to taste
- 1 pinch red pepper flakes
- 2 tablespoons olive oil
- 2 ½ cups cold water (600 mL)
- parmesan cheese, to garnish

Preparation
- Add the onion, garlic, tomatoes, basil, parsley, linguine, salt, pepper, red pepper flakes, olive oil, and water to a large pot. Cook over a high heat for 2 minutes, submerging the pasta into the water once it’s soft enough.
- Reduce the heat to medium-low, tossing and stirring continuously until the liquid reduces down into a thick sauce.
- Serve the pasta topped with Parmesan and more basil.
