Dutch Baby
- 3 large eggs
- ½ cup all-purpose flour
- ½ cup whole milk
- 1 tablespoon sugar
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- ¼ teaspoon ground nutmeg
- 4 tablespoons unsalted butter
Cream Cheese Topping
- 4 oz cream cheese, softened
- 2 tablespoons powdered sugar
- 3 tablespoons heavy cream
- 1 tablespoon orange zest
- Optional Toppings:
- Syrup, fruit preserves, powdered sugar, cinnamon sugar, whipped cream, or cranberry compote

Preparation
- Prepare the Dutch baby: Preheat the oven to 425°F (220°C).
- In a blender, combine the eggs, flour, milk, sugar, orange zest, vanilla, and nutmeg. Blend until smooth. Alternatively, whisk by hand until lump-free.
- Place the butter in a 10-inch cast-iron skillet, and place it in the oven to melt. Once melted, pour the batter into the hot skillet.
- Bake in the preheated oven for about 20 minutes, or until puffed and golden. Do not open the oven during this time. Reduce the oven temperature to 300°F (150°C), and bake for another 5 minutes to set.
- Meanwhile, prepare the cream cheese topping: In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
- Gradually add the heavy cream, beating until light and fluffy.
- Mix in the orange zest for a bright, citrusy kick.
- Slice the Dutch baby into wedges, and top with the cream cheese topping or any other desired toppings.
