Dutch Baby

  • 3 large eggs
  • ½ cup all-purpose flour
  • ½ cup whole milk
  • 1 tablespoon sugar
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • 4 tablespoons unsalted butter

Cream Cheese Topping

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 3 tablespoons heavy cream
  • 1 tablespoon orange zest
  • Optional Toppings:
  • Syrup, fruit preserves, powdered sugar, cinnamon sugar, whipped cream, or cranberry compote

Preparation

  1. Prepare the Dutch baby: Preheat the oven to 425°F (220°C).
  2. In a blender, combine the eggs, flour, milk, sugar, orange zest, vanilla, and nutmeg. Blend until smooth. Alternatively, whisk by hand until lump-free.
  3. Place the butter in a 10-inch cast-iron skillet, and place it in the oven to melt. Once melted, pour the batter into the hot skillet.
  4. Bake in the preheated oven for about 20 minutes, or until puffed and golden. Do not open the oven during this time. Reduce the oven temperature to 300°F (150°C), and bake for another 5 minutes to set.
  5. Meanwhile, prepare the cream cheese topping: In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
  6. Gradually add the heavy cream, beating until light and fluffy.
  7. Mix in the orange zest for a bright, citrusy kick.
  8. Slice the Dutch baby into wedges, and top with the cream cheese topping or any other desired toppings.
