Ingredients

for 6 servings

  • 2 tablespoons unsalted butter
  • 1 lb brioche loaf, cut into 1–2-inch squares
  • 2 cups half-and-half
  • 1 cup whole milk
  • 4 large eggs, divided
  • 1 tablespoon vanilla extract
  • 1 tablespoon espresso powder
  • 4 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 cup Baileys Irish Cream
  • 1 cup granulated sugar
  • ½ teaspoon kosher salt

To serve:

  • ice cream
  • fresh berry

Preparation

  1. Generously butter a 9 × 13-inch baking pan, and set aside.
  2. Preheat the oven to 325°F (160°C).
  3. Place the bread in the baking pan. Set aside.
  4. In a large bowl, combine the half-and-half, whole milk, eggs, vanilla, espresso powder, cinnamon, cloves, nutmeg, and Baileys. Gently whisk to combine.
  5. Add the sugar and salt, and whisk again until well mixed.
  6. Pour the custard evenly over the bread, reserving about 1 cup of liquid on the side, and being sure to coat the bread well.
  7. Bake in the preheated oven for about 1 hour, or until golden.
  8. While the bread pudding is baking, pour the reserved 1 cup of liquid into a small pot over medium heat. Bring the custard to a low simmer.
  9. Gently reduce the custard until it’s slightly thickened, about 3 minutes. Once the bread pudding is done, pour it over the baked pudding.
  10. Serve with scoops of ice cream and fresh berries.
