Ingredients

- 2 frozen croissants, thawed at room temperature
- 2 teaspoons pesto
- 2 Colby cheese slices
- 2 provolone cheese slices
- ½ cup sliced roasted red bell peppers
- 4 deli-style turkey breast slices
- ¼ cup shredded Colby Jack or mozzarella cheese
- Butter or cooking spray, for greasing

Preparation
- Preheat a nonstick waffle maker to medium-high heat. Lightly grease with butter or cooking spray.
- Place 1 thawed croissant on the center of the waffle maker. Close the lid gently but firmly, and cook for 3–4 minutes, until golden, crispy, and cooked through. Repeat with the second croissant.
- Transfer croffles to a cutting board, and cut each in half horizontally with a serrated knife.
- Spread ½ teaspoon of pesto on each half of the croffle (1 teaspoon total per sandwich). Top each with 1 Colby cheese slice, ¼ cup roasted bell peppers, 2 turkey slices, 1 provolone cheese slice, and 2 tablespoons shredded Colby Jack cheese. Top with the remaining croffle halves.
- Place 1 sandwich back on the waffle maker. Press the lid down gently, and cook for 1–2 minutes, until the cheese is melted and the filling is warmed through. Repeat with the second sandwich. Serve hot.
