Ingredients

for 4 servings

  • 1 lb ground meat (I used pork)
  • 1 teaspoon kosher salt, divided
  • 1 teaspoon black pepper, divided
  • 1.5 tablespoons fish sauce, divided, plus more to taste
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 3 ripe roma tomatoes, diced
  • ½ cup water
  • 1 cup cherry tomatoes
  • 1 scallion, sliced
  • cooked rice, hot

Preparation

  1. In a bowl, stir together the ground meat, ½ teaspoon of the salt, ½ teaspoon of the black pepper, and ½ tablespoon of the fish sauce.
  2. In a pan over medium heat, add the oil. Add the onion and garlic; cook, stirring occasionally, until aromatic, about 3 minutes.
  3. Add the seasoned meat. Cook over medium heat, using a spatula to break down the meat into smaller chunks, until most of the meat has browned, about 5 minutes. Add the roma tomatoes. Cover and cook until the tomatoes break down, about 2 minutes. Uncover and stir in the water.
  4. Stir in the remaining ½ teaspoon salt, ½ teaspoon black pepper, and 1 tablespoon fish sauce. Add the cherry tomatoes, and simmer over medium-low heat, covered, for about 3 minutes, or until the pork is cooked through.
  5. Season to taste with more fish sauce, and garnish with scallions. Serve with a bowl of hot rice.
