Ingredients

  • 2 tablespoons oil, divided
  • 1 lb ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 serrano peppers, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 cup amber lager-style beer
  • 1 15-ounce can Ranch Style Beans with Sliced Jalapeños Peppers
  • 1 10-ounce can Rotel Tomatoes & Green Chilies
  • 1 8-ounce can tomato sauce
  • 4 9.75-ounce bags Fritos Flamin' Hot Corn Chips
  • 1 cup shredded cheddar cheese
  • 1 cup spicy queso
  • sour cream, for garnish (optional)
  • pico de gallo, for garnish (optional)
  • 4 pickled serrano peppers, sliced, for garnish (optional)
  • freshly chopped cilantro, for garnish (optional)

Preparation

  1. In a large skillet over medium heat, heat 1 tablespoon of oil. Add the ground beef, breaking it into crumbles with a wooden spoon. Cook until browned, about 5-8 minutes. Remove the beef from the skillet and set aside.
  2. Add the remaining 1 tablespoon of oil to the skillet. Add the onion, garlic, and serrano peppers. Cook until the onions are fully translucent, about 5-8 minutes.
  3. Stir in the chili powder, cayenne pepper, cumin, and salt until well combined.
  4. Return the browned beef to the skillet. Pour in the beer and cook until the alcohol has evaporated and the liquid is reduced by half, about 3-5 minutes.
  5. Add the beans, Rotel, and tomato sauce. Bring the mixture to a low simmer. Cover with a lid and let it cook, allowing the sauce to reduce and thicken and the flavors to intensify, about 1 hour.
  6. To assemble, carefully cut along the long side of each Flamin’ Hot Fritos bag to create an opening for serving. Spoon the chili over the Fritos in each bag. Top with shredded cheddar cheese, spicy queso, sour cream, sliced pickled serrano peppers, pico de gallo, and cilantro, if desired.
