This sheet pan crumble is the perfect solution for anyone who can’t decide which fruit crumble to bring to the potluck! There are so many delicious fruits, why not choose four! We used fall fruits for this crumble, but you really can use any fruit of choice.

Ingredients
for 16 servings
Filling
- ¾ cup granulated sugar
- ⅓ cup all-purpose flour
- ½ teaspoon kosher salt
- 1 lemon, zested and juiced
- 1 vanilla bean, split lengthwise and seeds scraped
- 2 cups apples, chopped and peeled
- 2 cups pear, chopped and peeled
- 2 cups blackberries
- 2 cups plum, sliced
Topping
- 1 cup all-purpose flour
- 1 cup quick-cooking oats
- ⅓ cup granulated sugar
- ½ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup unsalted butter, cubed and chilled
- vanilla ice cream, or whipped cream, for serving

Preparation
- Preheat the oven to 375°F.
- To make the filling, combine the sugar, flour, salt, lemon juice, lemon zest, and vanilla beans seeds in a large bowl.
- Split the filling into 4 medium bowls. Place the apples, pears, persimmons, and plums each into their own bowls and toss well until the fruits are fully covered with the flour mixture.
- To make the topping, combine the flour, oats, sugar, salt, cinnamon, and nutmeg in a large bowl.
- Add your butter and cut in with a pastry scraper or crumble with your fingers until the combination is crumbly - small clumps are okay.
- Place your fruit mixtures each into the corner of a greased sheet pan. Flatten so they’re evenly distributed and don’t worry if they mix a bit.
- Sprinkle the topping in an even layer over the fruit.
- Bake for 30 minutes or until the topping is golden brown and the fruit is bubbling.
- Let the crumble sit for 25 minutes to cool and serve warm with ice cream.
