Ingredients

for 1 serving

Salted kumquats

  • 6 kumquat halves
  • 1.5 tablespoons kosher salt
  • 1 tablespoon sugar
  • 1 teaspoon msg

Salt Rim

  • 2 tablespoons kosher salt
  • 1.5 tablespoons sugar
  • 1 teaspoon msg
  • 1 teaspoon lemon zest, plus 1 lemon wedge
  • Zest of 1 kumquat

Mocktail

  • ½ teaspoon freshly squeezed ginger juice (finely grate ginger, then squeeze juice in hand)
  • ½ oz freshly squeezed lemon juice
  • ½ oz passion fruit puree
  • ice
  • 4 oz ginger ale
  • Kumquat slice, for garnish

Preparation

  1. Make the salted kumquats: Toss together the kumquats, salt, sugar, and MSG in a bowl. Let marinate at room temperature for 10 minutes, lightly mashing them to release the flavor.
  2. Make the salt rim: Stir together the salt, sugar, MSG, lemon zest, and kumquat zest in a shallow bowl. Rub a lemon wedge around the rim of a chilled glass. Dip the rim into the salt rim mixture to coat.
  3. Make the mocktail: In a shaker tin, combine the salted kumquats, ginger juice, lemon juice, passion fruit puree, and a scoop of ice. Shake for 10 seconds.
  4. Strain the mixture into the prepared glass.
  5. Pour the ginger ale over the top, gently stir, and serve immediately. Garnish with a slice of kumquat.
