Peaches & Cream “Chips And Salsa”

Ingredients
for 4 servings
- 4 fresh medium peaches, unpeeled and cut into small cubes
- ½ teaspoon maple syrup
- ¼ teaspoon ground cinnamon, more to taste (optional)
- 1 (4-ounce) white chocolate bar or ½ cup white chocolate chip
- 1 teaspoon coconut oil
Preparation
- Line a cutting board with parchment paper. Set aside.
- Stir together the peaches, maple syrup, and cinnamon, if desired. Chill in the refrigerator while making the white chocolate “chips.”
- Cook the white chocolate and coconut oil in a small saucepan over low heat, stirring often, until melted, 3–5 minutes.
- Spoon dollops (about ½ tablespoon each) of the melted chocolate onto the parchment-lined cutting board. Using the back of a spoon, gently press the chocolate with circular motions to create large “chips.”
- Place in the freezer until the chocolate is set, about 15 minutes.
- Remove the chocolate “chips” from the parchment paper. Serve on a plate alongside the peach salsa.
