Ingredients

for 1 serving

  • 3 peaches, pitted and diced
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • ⅓ cup brown sugar
  • ½ lemon, juiced
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • ⅓ cup plain greek yogurt
  • ⅓ cup maple syrup
  • 1 cup almond milk
  • granola, for topping
  • peach compote, for topping

Preparation

  1. Add peaches to a large skillet on medium heat, add cinnamon, nutmeg, vanilla extract, brown sugar, and lemon juice, mix and cook for 2 minutes until it gets syrupy. Then remove from heat.
  2. To a jar add oats, chia seeds, greek yogurt, maple syrup, almond milk, and peaches. Stir well and refrigerate for at least 10 hours or overnight.
  3. When ready to eat in the morning, top it with more peach compote and granola of your choice.
