for 1 serving
- 3 peaches, pitted and diced
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon vanilla extract
- ⅓ cup brown sugar
- ½ lemon, juiced
- 1 cup rolled oats
- 1 tablespoon chia seeds
- ⅓ cup plain greek yogurt
- ⅓ cup maple syrup
- 1 cup almond milk
- granola, for topping
- peach compote, for topping
Preparation
- Add peaches to a large skillet on medium heat, add cinnamon, nutmeg, vanilla extract, brown sugar, and lemon juice, mix and cook for 2 minutes until it gets syrupy. Then remove from heat.
- To a jar add oats, chia seeds, greek yogurt, maple syrup, almond milk, and peaches. Stir well and refrigerate for at least 10 hours or overnight.
- When ready to eat in the morning, top it with more peach compote and granola of your choice.
