Ingredients

for 6 servings

Ginger Syrup Ginger Ale (made with cane sugar)

  • 1 cup roughly chopped peeled fresh ginger
  • 2 cups organic cane sugar
  • 1 cup filtered water
  • 6 cups sparkling water, chilled
  • 6 tablespoons fresh lemon juice
  • 6 teaspoons fresh lime juice
  • 3 teaspoons vanilla extract, optional

Ginger Tea Ginger Ale (made with honey)

  • 1 cup roughly chopped peeled fresh ginger
  • 2 cups filtered water
  • 6 cups sparkling water, chilled
  • 6 tablespoons fresh lemon juice
  • 6 -12 tablespoons honey or maple syrups, to taste

Preparation

  1. To make the Ginger Syrup Ginger Ale: In a 2-quart saucepan, combine the ginger, sugar, and water. Bring to a simmer over medium heat. Simmer, stirring occasionally with a wooden spoon, until the syrup thickens slightly and turns a pale gold color, about 20 minutes. Pour the syrup through a fine-mesh strainer into a glass jar. Discard the solids. Let the syrup cool to room temperature, about 30 minutes. For each serving, mix 2 tablespoons ginger syrup with 1 cup sparkling water in a 16-ounce glass. Stir 1 tablespoon lemon and 1 teaspoon lime juice into each glass. If desired, stir ½ teaspoon vanilla into each glass.
  2. To make the Ginger Tea Ginger Ale: In a 2-quart saucepan, combine the ginger and water. Bring to a boil over high heat, Reduce the heat to low, and simmer for 15 minutes. Pour the tea through a fine-mesh strainer into a heatproof glass measuring cup. Discard the solids. Let the tea cool to room temperature, about 30 minutes. For each serving, mix ¼ cup ginger tea with 1 cup sparkling water in a 16-ounce glass. Stir 1 tablespoon lemon juice and 1–2 tablespoons honey (or maple syrup) into each glass.
