Homemade Date Donuts (Vegan, Refined Sugar Free, Gluten Free)

Ingredients

for 6 servings

  • 10 mejdool dates, pitted
  • ¼ cup tap water (60 mL)
  • ⅓ cup peanut butter (80 g), or nut butter of choice
  • 4 tablespoons cocoa powder
  • 2 tablespoons flaxseed meal
  • ½ teaspoon baking soda
  • 1 pinch salt
  • topping of your choice, Chocolate/Vegan Chocolate melted in the microwave OR equal parts of Cocoa Powder & Coconut Oil

Preparation

  1. Preheat the oven to 180°C
  2. Add the pitted dates, tap water and lemon juice to a food processor or blender. Blitz until a paste forms. You may have to stop to scrape down the edges in between.
  3. Add the peanut butter, cocoa powder, flaxseed meal, baking soda and salt. Blitz again until well combined
  4. Grease a donut tray or mini cupcake tray with cooking spray. Use a spoon or wet hands to split the dough equally
  5. Bake for 15 minutes, then let the donuts sit in a turned off oven for 5 minutes.
  6. Let cool, then remove from the tray and top with melted chocolate or a mix of melted coconut oil & cocoa powder
