Homemade Copycat Perfect Bars

Ingredients
for 12 servings
- 2.25 cups uncooked old-fashioned rolled oats (or 2 cups store-bought oat flour)
- ½ cup vanilla protein powder
- 1 teaspoon superfood powder, (optional)
- 1 teaspoon kosher salt or sea salt
- 1 cup natural creamy peanut butter
- ½ cup honey, plus more as needed
- 3 tablespoons coconut oil, melted, plus more as needed
- 2 teaspoons vanilla extract
- 2 tablespoons miniature chocolate chips, (optional)

Preparation
- Line a 9-inch square baking dish with parchment paper. Set aside.
- In a food processor, pulse the oats until a fine texture is reached. (You should have about 2 cups of ground oat flour. If using store-bought oat flour, simply measure 2 cups.) Pour the oat flour into a large bowl.
- Stir in the protein powder, superfood powder (if using), and kosher salt until well combined.
- Stir in the peanut butter, honey, coconut oil, and vanilla until well combined, using your hands to fully incorporate. The mixture should be firm but soft. If it’s dry or crumbly, add an additional 1 tablespoon honey or coconut oil.
- Transfer the mixture to the parchment-lined dish. Using a spatula, spread evenly, pressing the mixture into the bottom of the dish. Refrigerate until set, about 1 hour.
- If desired, top with chocolate chips and flaky salt. Remove from the dish, and place on a cutting board. Using a sharp knife, cut evenly into 12 bars. Store in an airtight container in the refrigerator for up to 1 week.
