Crispy Buffalo Potatoes

Ingredients

for 2 servings

  • 2 cups tortilla chips (150 g)
  • ½ teaspoon buffalo seasoning
  • ¼ cup buffalo sauce (60 mL)
  • 1 pinch garlic powder
  • 4 tablespoons tapioca flour
  • 4 tablespoons unsweetened almond milk
  • 2 medium yellow potatoes

Preparation

  1. Preheat oven to 450°F.
  2. Place tortilla chips in the food processor and blend into a fine crumb mixture.
  3. Mix crumbs together with spices In a bowl. Stir and set aside.
  4. Slice your potatoes.
  5. Then coat slices in the tapioca flour, dip into almond milk, and then coat in the tortilla chips. Place on a sprayed or lined pan and bake for 30 minutes, flipping halfway through. Toss in the buffalo sauce after the potatoes have cooled for a few minutes.
