Cherry Vanilla Syrup

Ingredients
for 1 serving
- 1 (1-pound package) frozen cherries (about 3 cups)
- 1 ¼ cups water
- ¾ cup granulated sugar
- 1 ½ tablespoons vanilla extract
Preparation
- Place the cherries, water, sugar, and vanilla in a medium saucepan. Bring to a boil over medium-high heat. Reduce the heat to a simmer. Cook, stirring occasionally and using a spoon or potato masher to gently mash the cherries against the side of the pan, until the cherries soften and the syrup reduces slightly, about 15 minutes.
- Let the syrup mixture cool to room temperature, 20–30 minutes. Pour through a fine mesh strainer into a jar, pressing down on the solids to extract as much syrup as possible. Discard the solids. Seal the lid on the jar, and store in the refrigerator for up to 1 week.
