Cherry Vanilla Float

This cherry vanilla float is a sweet, fizzy twist on your usual float with a fun splash of cherry syrup, creamy vanilla ice cream, and a zesty lime soda kick. The homemade cherry syrup is rich and jammy, made by simmering cherries, cherry juice, and sugar, then blending it all smooth. Once you’ve got your syrup ready, it’s easy to assemble with just a little soda, ice cream, and a touch of whipped cream. It’s a great treat for hot days, or simply when you want something fun and refreshing!

Ingredients

for 1 serving

Cherry Syrup

  • 1 (12-ounce) bag Signature SELECT® frozen dark sweet cherry
  • 1 ½ cups cherry juice
  • ¼ cup granulated sugar

Float

  • ¾ cup Signature SELECT® lemon lime soda, chilled
  • 2 scoops Signature SELECT® Vanilla Bean Ice Creams
  • whipped cream, for garnish
  • maraschino cherry, for garnish

Preparation

  1. Make the cherry syrup: Place the cherries, cherry juice, and sugar in a small saucepan. Bring to a boil over medium heat. Reduce to a simmer, and cook, stirring occasionally, until the mixture looks thick and jammy and the cherries are soft, about 15 minutes.
  2. Let the mixture cool slightly, about 5 minutes. Using an immersion blender, blend the cherry mixture in the pan until smooth. (Alternatively, transfer it to a regular blender, but be careful — it's hot!) Pour the blended mixture through a fine mesh strainer into a small bowl. Discard the solids. Let the syrup cool slightly, about 5 minutes.
  3. Make the float: Pour 1 tablespoon of the cherry syrup into the bottom of a tall, footed glass. Slowly pour in the lime soda — it’ll foam up a bit, so go easy. Gently top with the ice cream. Finish with a swirl of whipped cream and a maraschino cherry. (Store the extra syrup in an airtight container in the fridge for up to 1 week.) Serve immediately with a straw and a long spoon!
