- 12 oz semisweet chocolate, or chocolate of choice
- 1 tablespoon coconut oil
- ½ teaspoon almond extract
- 1 ½ cups frozen pitted cherries
- ⅓ cup sliced almonds

Preparation
- Cook the chocolate and oil in a small nonstick saucepan over low, stirring often, until the chocolate is melted, about 3 minutes. Stir in the almond extract. Keep over the lowest heat until ready to use.
- Line a cutting board with parchment paper. Arrange the frozen cherries in tightly packed rows, making sure they’re placed close together without overlapping.
- Pour the melted chocolate mixture over the cherries, and immediately top with the sliced almonds.
- If the chocolate isn’t firm enough, put it in the freezer until set, about 15 minutes.
- Store in the freezer, and enjoy within 6 months.
