Ingredients

  • unsalted butter, for greasing
  • 4 cups leftover mashed potatoes
  • kosher salt, to taste
  • black pepper, to taste
  • 2 large eggs
  • ⅓ cup sour cream, plus more for serving
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup parmesan cheese
  • 2 tablespoons chopped fresh chives

Preparation

  1. Preheat the oven to 400°F (200°C). Grease a 12-cup square or round muffin pan with butter.
  2. Add the leftover mashed potatoes to a large bowl. Taste and season with salt and pepper.
  3. In a medium bowl, whisk together the eggs and sour cream until combined.
  4. Stir in the cheddar cheese, Parmesan cheese, and chopped chives.
  5. Add the egg mixture to the mashed potatoes, and combine until well mixed.
  6. Spoon the potato mixture into the greased muffin pan, filling each cup to the top or slightly below, about 4 tablespoons per muffin cup.
  7. Bake for 25-35 minutes, until the potato puffs pull away from the sides of the cups and are golden brown all over.
  8. Remove from the oven, and let cool for 5 minutes in the pan.
  9. Turn the potato puffs out onto a platter, and serve with additional sour cream.
