- 4 slices prosciutto
- 1 large egg
- salt, to taste
- black pepper, to taste
- 1 tablespoon unsalted butter
- 1 everything bagel, split
- 2 tablespoons cream cheese
- ¼ cup microgreens
- 2 tomato slices
- 8 red onion slices
- Sriracha, to taste
- ½ avocado, sliced

Preparation
- Heat a small pan over medium heat. Generously spray the pan with nonstick cooking spray. Lay the prosciutto in the pan and cook until crisp, about 1 minute.
- Crack an egg in the center of the prosciutto. Top with salt and pepper to taste.
- Cover the pan with a lid, and cook for about 2-3 minutes for a slightly runny egg. Adjust cook time accordingly based on your preferred egg doneness. Remove the prosciutto egg from the pan and set aside.
- Add a pat of butter to the pan and toast the bagel halves until golden brown and crispy, about 1 minute per side.
- To assemble, spread cream cheese on both slices of the bagel, then layer the prosciutto and egg on one slice.
- Next, top microgreens and tomatoes. Season the tomatoes with salt and pepper.
- Add the red onion slices, sliced avocado, and remaining bagel half.
