- 4 slices thick-cut bacon
- 5 slices tomato
- 3 butter lettuce leaves, washed and dried
- 2 slices sourdough bread
- 1 tablespoon butter
- 2 tablespoons mayonnaise
- 2 tablespoons whole grain mustard
- 1 tablespoon lemon juice
- ½ teaspoon black pepper
- ⅓ teaspoon salt
- salt and pepper, for seasoning, if desired
- ½ avocado, thinly sliced

Preparation
- Preheat the oven to 400°F (200°C). Place bacon slices on a baking sheet and bake until crispy, about 15-20 minutes depending on thickness. Remove and drain on paper towels.
- Meanwhile, prepare the sauce by mixing together mayonnaise, wholegrain mustard, lemon juice, black pepper, and salt. Chill in the fridge until ready to use.
- Season the sliced tomatoes with a pinch of salt and pepper.
- Heat a skillet or griddle over medium heat. Spread butter on one side of each slice of sourdough bread. Toast the bread slices in the skillet until golden brown, about 1-2 minutes per side.
- Assemble the sandwich: Spread a layer of sauce on the toasted side of each bread slice. Layer with bacon, lettuce, seasoned tomatoes, avocado slices, and more sauce if desired. Top with the remaining slice of bread, sauce side down.
- Slice the sandwich in half diagonally and serve immediately.
