For a sweet, but light breakfast, this open-faced treat checks all the boxes. Ricotta is whipped with lemon zest and maple syrup to create a fluffy spread, then dolloped on a toasted Thomas’® Cinnamon Raisin bagel with seasonal summer berries.

- 2 Thomas’® Cinnamon Raisin Bagels, halved and toasted
- 1 cup ricotta cheese
- ¼ cup heavy whipping cream
- 1.5 tablespoons maple syrup
- 1 lemon, zested
- 2 teaspoons lemon juice
- assorted fresh berry, for topping

Preparation
- In a medium bowl, add the ricotta, heavy whipping cream, maple syrup, lemon zest, and lemon juice. Using a hand mixer on medium-low speed, beat for 2-3 minutes, until light and fluffy.
- Spoon the ricotta mixture over each toasted Thomas’® Cinnamon Raisin Bagel. Top with the fresh berries.
