Ingredients

  • 2 salmon fillets
  • 2 teaspoons Old Bay® seasoning, divided
  • 4 teaspoons smoked paprika, divided
  • 2 teaspoons garlic powder, divided
  • 1 teaspoon salt
  • 4 tablespoons olive oil, divided
  • 3 tablespoons unsalted butter
  • 1 shallot, minced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 7 oz sun-dried tomatoes
  • 2 cups baby spinach
  • ½ lb fettuccine pasta

Preparation

  1. Season salmon with 2 teaspoons of Old Bay, 2 teaspoons of smoked paprika, 1 teaspoons of garlic powder, salt, and 2 tablespoons of olive oil. Rub it in on all sides and set aside.
  2. In a large skillet over medium-high heat, heat the remaining 2 tablespoons of oil until it shimmers. Add the salmon skin side down and cook for 4-5 minutes to crisp the skin. Flip and cook 4-5 minutes on the other side. If the salmon isn't to your preferred doneness, pop it in the oven set to 350˚F (180˚C) to finish cooking.
  3. Add the pasta to a pot of boiling salted water. Cook al dente according to package instructions.
  4. In a large skillet, melt butter over medium heat. Add the shallot and garlic and cook for 2 minutes. Next, add the tomato paste, heavy cream, 2 teaspoons of Old Bay, 2 teaspoons of smoked paprika, 1 teaspoon of garlic powder, and stir to combine.
  5. Add the Parmesan cheese, cherry tomatoes, spinach, and sun-dried tomatoes, and stir to combine. Reduce heat to low combine until cheese is fully melted and spinach is wilted.
  6. Add the cooked pasta and lightly toss.
  7. Plate the pasta and add salmon on top with more sauce.
