Strawberry Sago
Strawberry sago is a delightful dessert that combines chewy tapioca pearls with a creamy, sweet strawberry base. Fresh strawberries are blended into a smooth mixture, giving the dish its vibrant color and fruity flavor. The sago pearls add a fun, jelly-like texture that contrasts perfectly with the silky cream. Served chilled, it's a refreshing treat that's perfect for warm days or as a light, satisfying dessert. Visit groovyfoodiess.com for more of Sarah's recipes!

Preparation
- Cook the sago according to the package instructions, making sure to rinse after cooking to prevent them from sticking too much.
- Stem and hull the strawberries. Cut half of the strawberries into ½-inch cubes, and leave the remaining strawberries whole.
- Drain the coconut jellies in the nata de coco from the syrup, and set aside. Discard the syrup.
- Place the whole strawberries, coconut milk, and condensed milk in a blender. Blend until smooth, about 2 minutes.
- Stir together the cooked sago, nata de coco jellies, cubed strawberries, and blended strawberry mixture in a large bowl. Top with the whole milk. Chill in the refrigerator for 4 hours, or until ready to serve.
- Ladle the sago into serving glasses.
