- 3 medium russet potatoes, washed and scrubbed clean
- ⅓ cup bread crumbs
- 2 tablespoons corn flour
- 2 tablespoons all-purpose flour, optional
- 1 teaspoon salt, plus more for seasoning
- vegetable oil, for frying
- ketchup, for serving

Preparation
- Place the potatoes in a large saucepan and cover with cold water.
- Add a large pinch of salt to the water. Bring to a boil and cook for 30 minutes, or until the potatoes are tender when pierced with a fork.
- Drain the potatoes in a colander. Peel them, then rice the potatoes into a large bowl with a potato ricer. You need about 2 cups of mashed potatoes. Reserve any excess for another use.
- To the large bowl add the breadcrumbs, corn flour, and flour, if using, and 1 teaspoon of salt to the mashed potatoes. Mix well.
- Turn the mixture out onto a clean surface and knead it into a dough. Return the dough to the bowl, cover, and refrigerate for 20 minutes.
- Fill a large Dutch oven halfway with vegetable oil and heat to 350°F (180°C). Place a wire rack over a baking sheet nearby for draining.
- Place the potato mixture between two sheets of parchment paper. Press down, then use a rolling pin to roll it out to about ⅓-inch (1-cm) thick.
- Peel away the top sheet of parchment paper, then use a 2-inch round cookie cutter to cut out a circle for the face. Use a straw to cut out the eyes and a spoon to shape the mouth into a smile. Repeat until you have 24 smiley faces.
- Use a spatula to transfer 4-5 smileys into the hot oil. Fry until golden brown, about 2-3 minutes. Transfer the smileys to the prepared wire rack to drain excess oil. Season with a pinch of salt. Repeat frying and draining with the remaining dough.
- Serve with a side of ketchup.
