Preparation

  1. Place the potatoes in a large saucepan and cover with cold water.
  2. Add a large pinch of salt to the water. Bring to a boil and cook for 30 minutes, or until the potatoes are tender when pierced with a fork.
  3. Drain the potatoes in a colander. Peel them, then rice the potatoes into a large bowl with a potato ricer. You need about 2 cups of mashed potatoes. Reserve any excess for another use.
  4. To the large bowl add the breadcrumbs, corn flour, and flour, if using, and 1 teaspoon of salt to the mashed potatoes. Mix well.
  5. Turn the mixture out onto a clean surface and knead it into a dough. Return the dough to the bowl, cover, and refrigerate for 20 minutes.
  6. Fill a large Dutch oven halfway with vegetable oil and heat to 350°F (180°C). Place a wire rack over a baking sheet nearby for draining.
  7. Place the potato mixture between two sheets of parchment paper. Press down, then use a rolling pin to roll it out to about ⅓-inch (1-cm) thick.
  8. Peel away the top sheet of parchment paper, then use a 2-inch round cookie cutter to cut out a circle for the face. Use a straw to cut out the eyes and a spoon to shape the mouth into a smile. Repeat until you have 24 smiley faces.
  9. Use a spatula to transfer 4-5 smileys into the hot oil. Fry until golden brown, about 2-3 minutes. Transfer the smileys to the prepared wire rack to drain excess oil. Season with a pinch of salt. Repeat frying and draining with the remaining dough.
  10. Serve with a side of ketchup.
  11. Enjoy!
