Ingredients

for 4 servings

  • 2 15-ounce cans corn, drained
  • 1 strip bacon, diced
  • 2 tablespoons dried shrimp
  • 1 scallion, sliced
  • 2 tablespoons grated parmesan cheese, plus more for garnish
  • 1 tablespoon unsalted butter
  • salt, to taste
  • black pepper, to taste
  • mayonnaise, for garnish (optional)
  • lime juice, for garnish (optional)

Preparation

  1. Heat a medium skillet or pan until hot and then add the diced bacon and cook over medium heat until the fat is rendered and the bacon is crispy, about 4 minutes.
  2. Add the corn and stir to coat the kernels in the bacon fat.
  3. Add in the dried shrimp. Top it with a small pat of butter, then add in the scallion and Parmesan. Season with salt and black pepper. Cover to melt the cheese, about 1 minute.
  4. Garnish with mayonnaise, additional Parmesan, and a squeeze of lime.
