- 2 15-ounce cans corn, drained
- 1 strip bacon, diced
- 2 tablespoons dried shrimp
- 1 scallion, sliced
- 2 tablespoons grated parmesan cheese, plus more for garnish
- 1 tablespoon unsalted butter
- salt, to taste
- black pepper, to taste
- mayonnaise, for garnish (optional)
- lime juice, for garnish (optional)

Preparation
- Heat a medium skillet or pan until hot and then add the diced bacon and cook over medium heat until the fat is rendered and the bacon is crispy, about 4 minutes.
- Add the corn and stir to coat the kernels in the bacon fat.
- Add in the dried shrimp. Top it with a small pat of butter, then add in the scallion and Parmesan. Season with salt and black pepper. Cover to melt the cheese, about 1 minute.
- Garnish with mayonnaise, additional Parmesan, and a squeeze of lime.
