Ingredients

- 4 cups whole milk
- 6 oz high quality dark chocolate, (72% cacao), chopped
- 2 tablespoons McCormick® Pure Vanilla Extract, divided
- 2 tablespoons McCormick® Salted Caramel Finishing Sugar, plus more for the glasses and garnish
- ½ cup freshly brewed espresso
- 5 oz white rum
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
- 1 tablespoon simple syrup

Preparation
- In a medium saucepan, heat the milk on medium high heat until steaming, about 3-5 minutes. Add the chopped chocolate, 1 tablespoon of McCormick® Pure Vanilla Extract, McCormick® Salted Caramel Finishing Sugar, and espresso. Whisk until chocolate is melted and smooth, about 1-2 minutes. Add the white rum and whisk until combined. Allow to cool for a few minutes before serving.
- In a medium bowl, use a hand mixer to whip the heavy cream, powdered sugar, and 1 tablespoon of McCormick® Pure Vanilla Extract on medium speed. Continue whipping until stiff peaks form, about 5 minutes. Transfer the whipped cream to a piping bag fitted with a star tip.
- Brush simple syrup around the rim of 4 hot toddy glasses and dip the rims into a bed of McCormick® Salted Caramel Finishing Sugar.
- Divide the mocha among the 4 glasses. Pipe whipped cream over the top of each glass, then sprinkle McCormick® Salted Caramel Finishing Sugar on top of the whipped cream for garnish.
