Ingredients

for 6 servings

  • 6 slightly firm pears
  • 5 cups water (1 ¼ L)
  • 2 cups sugar (400 g)
  • ¾ cup rum (180 mL)
  • 1 teaspoon vanilla extract
  • vanilla ice cream, to taste
  • ⅓ cup melted dark chocolate (75 g)

Preparation

  1. Peel the pears and cut the bottoms out, but leave the stems intact.
  2. Mix the water, sugar, rum, and vanilla together in a large pot over medium heat. Add the pears, cover the pot, and simmer for about 40 minutes, turning occasionally, until the pears are soft and golden.
  3. Scoop out the pears and place upright on a serving dish. If desired, cook the poaching liquid a bit longer until syrupy, then ladle over the pears. Serve with vanilla ice cream and a drizzle of melted chocolate.
