- 1.5 lb small Yukon gold potatoes
- 2 tablespoons avocado oil
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 2 cups freshly grated parmigiano-reggiano cheese
- ¼ cup unsalted butter, melted

Preparation
- Preheat the oven to 450°F (230°C).
- Using a sharp chef's knife, cut each potato in half. Score each potato half about ¼-inch deep in a diamond (crosshatch) pattern. Set aside.
- Transfer the potatoes to a large bowl, and toss with the olive oil, paprika, garlic powder, salt, and pepper. Set aside.
- Sprinkle the cheese on a greased half-sheet baking sheet, and spread it into an even layer.
- Take each potato half, and press it into the cheese, cut side down. Repeat until all the potatoes are in the baking sheet.
- Bake for 25–30 minutes, until the potatoes are tender and the cheese is golden and crispy.
- Remove from the oven, and let the potatoes cool for 10 minutes to allow the cheese to harden slightly.
- Use a flat spatula to remove the potatoes from the pan.
