  • 1.5 lb small Yukon gold potatoes
  • 2 tablespoons avocado oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups freshly grated parmigiano-reggiano cheese
  • ¼ cup unsalted butter, melted

Preparation

  1. Preheat the oven to 450°F (230°C).
  2. Using a sharp chef's knife, cut each potato in half. Score each potato half about ¼-inch deep in a diamond (crosshatch) pattern. Set aside.
  3. Transfer the potatoes to a large bowl, and toss with the olive oil, paprika, garlic powder, salt, and pepper. Set aside.
  4. Sprinkle the cheese on a greased half-sheet baking sheet, and spread it into an even layer.
  5. Take each potato half, and press it into the cheese, cut side down. Repeat until all the potatoes are in the baking sheet.
  6. Bake for 25–30 minutes, until the potatoes are tender and the cheese is golden and crispy.
  7. Remove from the oven, and let the potatoes cool for 10 minutes to allow the cheese to harden slightly.
  8. Use a flat spatula to remove the potatoes from the pan.
