Ingredients

for 30 servings

  • ½ cup watermelon juice
  • ½ cup sugar
  • 1.5 (.25-ounce) envelopes unflavored gelatins
  • ½ teaspoon dragon fruit powder, optional
  • ½ cup tequila
  • 1 teaspoon black sesame seeds
  • 15 whole limes, cut in half

Preparation

  1. Carefully use a paring knife and spoon to hollow out the lime halves to remove all membranes and pith.
  2. Juice the membranes to get ⅓ cup fresh lime juice.
  3. In a small pot over medium heat, combine the watermelon juice and sugar; stir until the sugar dissolves.
  4. Remove from the heat and stir in the gelatin and dragon fruit powder, if using. Stir until gelatin dissolves. Add the lime juice and tequila. Set aside.
  5. Add lime halves to a paper-towel lined baking tray then fill each one to the top with jello mixture. Place in the refrigerator and allow them to set for at least 3 hours.
  6. Once set, cut each lime shell into wedges and sprinkle with sesame seeds.
