Ingredients

Shake

  • ½ cup vanilla greek yogurt
  • 2 bananas, peeled
  • 2 pitted Medjool dates
  • 1 tablespoon fresh mint leaves
  • 1 cup loosely packed baby spinach leaves
  • 1 cup Vita Coco® Original Coconut Water
  • 2 cups ice cubes
  • Pinch of sea salt
  • Mint sprig, for garnish

Coconut Whip

  • ½ cup coconut cream
  • 1 tablespoon maple syrup
  • Pinch of sea salt

Preparation

  1. Make the shake: Place the yogurt, bananas, dates, mint, spinach, Vita Coco® Original Coconut Water, ice, and salt in a blender. Blend on high speed until smooth.
  2. Make the coconut whip: Place the coconut cream, maple syrup, and salt in a bowl. Using an electric hand mixer, beat on medium speed until smooth and creamy.
  3. Pour the shake evenly into 2 glasses. Spoon some coconut whip over each shake, and garnish each with a mint sprig.
  4. Enjoy!
