Katsu Curry

Ingredients

for 8 servings

  • 1 onion
  • 4 tablespoons butter, diced
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 2 tablespoons mild curry powder
  • 2 tablespoons turmeric
  • 2 cups chicken stock (500 mL)
  • 2 cups coconut milk (400 mL)
  • ¼ cup soy sauce (50 mL)

Preparation

  1. Melt butter in a pot over medium heat and add onion and garlic and saute.
  2. Once translucent, add flour, turmeric, and curry powder and mix to create a paste. Then, add chicken stock, place the lid on the pot, and simmer for 5-7 minutes.
  3. Slowly add coconut milk and simmer for 5 minutes. Once combined, add soy sauce and mix well to combine.
  4. Serve alongside jasmine rice.
