High-Altitude Snickerdoodles

Ingredients

for 36 servings

Dough

  • nonstick cooking spray, for greasing
  • 1 cup unsalted butter (230 g), at room temperature
  • 1 cup sugar (200 g)
  • 1 ½ tablespoons vanilla extract
  • 1 large egg, beaten
  • 2 cups flour (250 g), plus 1 tablespoon
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅛ teaspoon cream of tartar
  • 1 teaspoon cinnamon

For Rolling

  • ½ cup sugar (100 g)
  • 2 tablespoons cinnamon
  • salt, a few dashes
  • ⅛ teaspoon cayenne pepper, optional

Preparation

  1. Preheat oven to 350°F (180°C), and lightly grease a few large baking sheets.
  2. Cream butter, sugar, and vanilla.
  3. Whisk in the egg until relatively smooth.
  4. Mix the flour, baking powder, baking soda, salt, cream of tartar, and cinnamon.
  5. Combine the wet and dry ingredients with your hands until you have a well-incorporated dough.
  6. Mix all coating ingredients in a small bowl.
  7. Form balls about 1 inch (2 ½ cm) across, and roll generously in the coating mixture.
  8. Bake for 7-10 minutes, or until nicely-shaped and barely starting to brown on the edges. Don’t overdo it!
