Ingredients

- 4 Yukon Gold potatoes, large, washed
- ¼ cup vegetable oil
- 1 tablespoon salt, plus more to taste
- 4 slices applewood smoked bacon
- 5.3 oz garlic and herb soft cheese
- 2 garlic cloves, grated
- ¼ cup melted butter
- 1 tablespoon chopped green onions, plus more for garnish

Preparation
- Preheat the oven to 400°F (200°C).
- Rub the potatoes with oil and season generously with salt. Place them on a baking sheet and bake for about 1 hour, or until the potatoes are tender and fully cooked.
- While the potatoes are baking, thinly slice the bacon and cook it in a small pan over medium heat until crispy. Set aside, reserving a few pieces for garnish.
- In a large bowl, combine the crispy bacon and soft cheese. Mix well and transfer the mixture to a piping bag.
- Once the potatoes are cooked, remove them from the oven. Using a chef's knife, make three slices across the top of each potato to create a star shape. Be careful not to cut all the way through.
- Gently open up the slices and pipe the cheese and bacon mixture into the cuts of each potato.
- In a small bowl, mix together the grated garlic, melted butter, chopped green onion, and season with salt to taste. Drizzle this mixture over the stuffed potatoes.
- Return the potatoes to the oven for about 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and drizzle any remaining butter from the tray over the potatoes. Sprinkle with reserved bacon bits and chopped green onions.
- Serve hot with a dollop of sour cream on top.
