Ingredients
for 1 serving
- 1 cup plain greek yogurt
- 4 teaspoons sugar-free pudding mix (any flavor)
- 1 scoop (about 1 ounce) vanilla or chocolate protein powder
- 1 ice cream cone
- 1 tablespoon melted chocolate, optional
Preparation
- Place the yogurt, pudding mix, and protein powder in a medium (1½–2-quart) glass bowl in that order. Using a rubber spatula, stir well for 1–2 minutes, until smooth and thick with no powdery streaks.
- Using an ice cream scoop or spoon, fill the ice cream cone with the fro-yo mixture, shaping the top like soft serve.
- Place the cone upright in a shallow freezer-safe container lined with parchment paper (or use a cone holder if available).
- Freeze, uncovered, until set and firm, at least 1 hour or up to overnight.
- Just before serving, drizzle the top with melted chocolate, if using. Serve straight from the freezer for the best texture.
