Ingredients

  • 1 large sweet potato
  • 1 medium yellow onion
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 3 tablespoons flour
  • 7 eggs, divided
  • 3 tablespoons olive oil
  • garnish of choice, for serving

Preparation

  1. Peel the skin off the sweet potato, then coarsely grate on the large holes of a box grater.
  2. Peel the onion and coarsely grate on the large holes of a box grater.
  3. Transfer the grated sweet potato and onion to a towel-lined bowl. Gently twist the towel, squeezing the liquid into an empty bowl and discard.
  4. Transfer the sweet potato and onion to a bowl and add the salt, pepper, garlic powder, flour, and 1 egg. Gently stir to combine.
  5. Form the sweet potato mixture into large flat patties with your hands, approximately ⅓ cup of the mixture for each. You should have 6 patties total.
  6. Heat the olive oil in a 9 ½ -inch (24 cm) frying pan over medium heat.
  7. Add the the sweet potato patties. Fry for 2-3 minutes, then gently flip. Immediately use a small cookie cutter to cut out a hole in the middle of each fritter. Crack an egg in each hole, season a pinch of salt and pepper, then cover. Continue to cook for 3-7 minutes, until the eggs are cooked to your liking
  8. Top the sweet potato nests with your desired garnishes, such as cheddar, bacon, and scallions, avocado and hot sauce, or sour cream and chives.
