Ingredients

for 2 servings

  • 2 packs udon noodles, fresh or frozen
  • 2 tablespoons butter, divided
  • 1 tablespoon olive oil
  • ½ lb shrimp, peeled and deveined
  • 4 garlic cloves, minced
  • 1 tablespoon red pepper flakes
  • ⅓ cup white wine
  • ⅓ cup chicken broth
  • ¼ cup heavy cream
  • ¼ cup grated parmesan cheese
  • ½ cup mozzarella cheese, shredded
  • 1 scallion, sliced, for garnish

Preparation

  1. Cook the udon noodles according to the package instructions. Once cooked, drain and set aside.
  2. In a large pan, melt 1 tablespoon of butter over medium heat, then add in the olive oil. Add shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Sprinkle on some salt and pepper to season, then remove the shrimp and set aside.
  3. In the same pan, add the remaining 1 tablespoon of butter, minced garlic, and red pepper flakes. Sauté until fragrant, about 1 minute. Stir in the white wine, and let it simmer for 2-3 minutes.
  4. Stir in the broth. Lower the heat and slowly stir in the heavy cream. Taste and add more black pepper or red pepper flakes, adjusting for your heat preference. Simmer for 2-3 more minutes until the sauce thickens slightly.
  5. Add in both cheeses and stir to melt, about 30 seconds.
  6. Add the cooked udon noodles and shrimp back into the pan. Toss to coat everything in the creamy sauce, making sure the noodles are fully coated.
  7. Garnish with sliced scallion and serve.
