Ingredients

Cookie Dough

  • ½ cup (1 stick) unsalted butter
  • ½ cup vegetable oil
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons instant espresso powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Streusel

  • ½ cup all-purpose flour, plus more if needed
  • ⅓ cup packed brown sugar
  • 4 tablespoons softened unsalted butter
  • 2 teaspoons instant espresso powder
  • 1 teaspoon ground cinnamon

Icing

  • 1 cup powdered sugar
  • 2 tablespoons instant espresso powder
  • ½ teaspoon vanilla extract
  • Pinch of kosher salt

Preparation

  1. Make the cookie dough: Preheat your oven to 350°F (180°C), and line two baking sheets with parchment paper.
  2. In a stand mixer, mix together the butter, vegetable oil, and brown sugar for about 2 minutes, or until combined. Add the egg and vanilla, and whisk for about 2 minutes, or until fluffy and lighter in color.
  3. Add the flour, espresso, cinnamon, baking powder, baking soda, and salt. Mix until just combined.
  4. Using a 2-tablespoon cookie scoop, scoop the cookies 2 inches apart on the parchment. Using the back of the cookie scoop, carefully create an indentation on each cookie to make room for the streusel.
  5. Make the streusel: Combine the flour, brown sugar, butter, espresso, and cinnamon in a bowl, using your fingers to mix. Everything should start crumbling together, and if not, feel free to add another tablespoon of flour.
  6. Top the indents of the cookies with the streusel crumble. Bake in the preheated oven for about 15 minutes, or until toasty and brown.
  7. While the cookies are baking, make the icing: Mix together the powdered sugar, espresso, vanilla, and salt in a bowl.
  8. Once the cookies are done, remove from the oven, and let cool for 10 minutes. Drizzle with the icing.
