  • 3 tablespoons salted butter
  • 2 ripe bananas, cut into 1-inch slices
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of kosher salt
  • 1 teaspoon vanilla extract
  • Ice cream or coffee, for serving

Preparation

  1. Melt the butter in a small pot over medium heat. Add the bananas. Cook, stirring often, until softened, about 3 minutes. Using a spoon, mash the bananas to the desired consistency.
  2. Add the brown sugar to the bananas. Reduce the heat to medium-low, and cook, stirring often, until the brown sugar melts and becomes liquidy, about 3 minutes. Stir in the cinnamon and salt.
  3. Remove from heat, and let the mixture stand for 5 minutes. Stir in the vanilla until combined.
  4. Optionally, you can blend the mixture to make it very smooth, but I like to leave mine chunky!
  5. Serve with your favorite ice cream or coffee.
