Ingredients

for 4 servings

  • 2 lb boneless, skinless chicken breast
  • 3 garlic cloves, minced
  • zest of 1 lemon
  • 1 tablespoon dried oregano
  • 1 tablespoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon dried red pepper flakes
  • ⅓ cup olive oil, plus 2 tablespoons olive oil, divided
  • 1 2-pound package frozen straight-cut fries
  • 6 cups vegetable oil, or 48 ounces

Garlic-Parmesan Butter

  • 5 tablespoons unsalted butter, melted
  • 3 garlic cloves, minced
  • ¼ cup grated parmesan cheese
  • 2 tablespoons chopped fresh basil

Additional Ingredients

  • 1 cup marinara sauce, warmed
  • ½ cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped fresh basil

Preparation

  1. Place the chicken in a bowl. Add the garlic, lemon zest, oregano, paprika, salt, black pepper, pepper flakes, and ⅓ cup of the olive oil. Mix well, and marinate in the fridge for at least 30 minutes or up to overnight.
  2. Heat the remaining 2 tablespoons olive oil in a grill pan over medium-high heat. Add the marinated chicken, and cook for 4–5 minutes per side, until cooked through (and internal temperature reaches 165°F). Set aside until ready to use.
  3. Heat the vegetable oil in a deep-fryer or heavy-bottomed pot to 350°F (180°C). Working in 2 batches, fry frozen fries until golden and crispy, about 8 minutes per batch. Drain on paper towels.
  4. Make the garlic-Parmesan butter: Stir together the butter, garlic, Parmesan, and basil in a large bowl. Add the hot fries, and toss until well coated. Set aside.
  5. Preheat the oven to broil with the rack at least 3 to 6 inches from the broiler element. Cut the chicken into small cubes. Place the fries in a cast-iron skillet or broiler-safe baking sheet. Make 2 layers of the warm marinara, diced chicken, mozzarella, and Parmesan cheese. Broil for 2–3 minutes, until the cheese is bubbly and melted. Sprinkle with the basil, and serve immediately.
  6. Enjoy!
