Ingredients
for 4 servings
- 2 lb boneless, skinless chicken breast
- 3 garlic cloves, minced
- zest of 1 lemon
- 1 tablespoon dried oregano
- 1 tablespoon smoked paprika
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- ½ teaspoon dried red pepper flakes
- ⅓ cup olive oil, plus 2 tablespoons olive oil, divided
- 1 2-pound package frozen straight-cut fries
- 6 cups vegetable oil, or 48 ounces
Garlic-Parmesan Butter
- 5 tablespoons unsalted butter, melted
- 3 garlic cloves, minced
- ¼ cup grated parmesan cheese
- 2 tablespoons chopped fresh basil
Additional Ingredients
- 1 cup marinara sauce, warmed
- ½ cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 2 tablespoons chopped fresh basil
Preparation
- Place the chicken in a bowl. Add the garlic, lemon zest, oregano, paprika, salt, black pepper, pepper flakes, and ⅓ cup of the olive oil. Mix well, and marinate in the fridge for at least 30 minutes or up to overnight.
- Heat the remaining 2 tablespoons olive oil in a grill pan over medium-high heat. Add the marinated chicken, and cook for 4–5 minutes per side, until cooked through (and internal temperature reaches 165°F). Set aside until ready to use.
- Heat the vegetable oil in a deep-fryer or heavy-bottomed pot to 350°F (180°C). Working in 2 batches, fry frozen fries until golden and crispy, about 8 minutes per batch. Drain on paper towels.
- Make the garlic-Parmesan butter: Stir together the butter, garlic, Parmesan, and basil in a large bowl. Add the hot fries, and toss until well coated. Set aside.
- Preheat the oven to broil with the rack at least 3 to 6 inches from the broiler element. Cut the chicken into small cubes. Place the fries in a cast-iron skillet or broiler-safe baking sheet. Make 2 layers of the warm marinara, diced chicken, mozzarella, and Parmesan cheese. Broil for 2–3 minutes, until the cheese is bubbly and melted. Sprinkle with the basil, and serve immediately.
