Chicken Burrito Bowls
This filling dinner is complete with expertly cooked and seasoned chicken on a bed of rice, with all the best burrito toppings from slices of avocado to a dollop of spicy salsa. It’s a fabulous option for meal prep because many of the components can be made ahead of time and then quickly assembled when it’s time for dinner.

Ingredients
for 2 servings
- 1 tablespoon olive oil
- 2 Wellsley FarmsⓇ No Antibiotics Boneless Skinless Chicken Breasts
- 2 tablespoons Wellsley FarmsⓇ Taco Seasoning
- 2 cups Wellsley FarmsⓇ Thai Hom Mali Jasmine Rice, cooked and warmed
- 1 lime, juiced
- 1 tablespoon finely chopped cilantro
- ½ teaspoon kosher salt
Toppings:
- 2 Wellsley FarmsⓇ Hass Avocados, pitted and cubed
- ½ cup Wellsley FarmsⓇ Organic Salsa
- finely shredded iceberg lettuce
- roma tomato, chopped
- red onion, small diced
- sour cream
- shredded mexican cheese blend
- jalapeño pepper, thinly sliced
- chopped cilantro
- tortilla chip, for serving

Preparation
- Heat the olive oil in a cast iron skillet over medium heat until it shimmers. Season each Wellsley FarmsⓇ No Antibiotics Boneless Skinless Chicken Breast with 1 tablespoon Wellsley FarmsⓇ Taco Seasoning on both sides. Cook in the hot oil for 8 minutes per side, or until an instant-read thermometer inserted into the center reads 160°F (71°C). Transfer chicken breasts to a cutting board and let rest for 5 minutes before cutting into ¾-inch cubes. Keep warm and set aside.
- In a medium bowl, mix together the cooked Wellsley FarmsⓇ Thai Hom Mali Jasmine Rice, lime juice, cilantro, and salt until well combined. Divide the rice mixture among 2 bowls.
- In the corner of each bowl, add the cubed Wellsley FarmsⓇ No Antibiotics Boneless Skinless Chicken Breasts, cubed Wellsley FarmsⓇ Hass Avocados, Wellsley FarmsⓇ Organic Salsa, iceberg lettuce, Roma tomatoes, and red onion. In the center of each bowl, add a dollop of sour cream, Mexican cheese blend, jalapeño peppers, and cilantro. Serve with tortilla chips.
