Ingredients

for 8 servings

  • 1 store-bought pie crust
  • 9.5 oz chorizo
  • ½ medium yellow onion, diced
  • 8 eggs
  • 8 oz shredded cheddar cheese
  • ½ cup spring onion, diced
  • 1.5 cups fresh spinach
  • 1 teaspoon ground black pepper
  • 1 tablespoon garlic powder
  • 2 teaspoons kosher salt
  • sour cream, for garnish

Preparation

  1. Preheat the oven to 375º.
  2. Press pie crust into a pie dish. Place the pie dish on a rimmed baking sheet. Fill the inside with pie weights (or line it with parchment and use dried beans if you don’t have pie weights), around ¾ full, and bake at 350˚F for about 20 minutes, or until the crust is a very light golden brown.
  3. While the pie crust is baking, cook the sauté in a large pan on medium heat until fully cooked, around 5 minutes. Remove the chorizo from the pan and set aside.
  4. In the same pan, add the diced onions and sauté for 3 minutes. Remove from heat.
  5. In a large bowl, whisk 8 eggs, then add the chorizo, onion, cheese, spring onions, and spinach. Season with garlic powder, black pepper, and kosher salt.
  6. Once the pie crust is done blind baking, pour the filling into the crust.
  7. Bake the quiche for 40-45 minutes or until filling is just set. Let the quiche cool for a few minutes before slicing and serving. Top with sour cream, if desired.
