Caramelized bananas
- ½ cup sugar
- 2 tablespoons water
- 3 large bananas
Batter
- 4 ripe medium bananas
- 2 large eggs
- 1 cup sugar
- ½ cup plain whole-milk Greek yogurt
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon kosher salt
- ¾ cup unsalted butter, melted, plus more for greasing pan

Preparation
- Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan with unsalted butter, then line it with parchment paper, and grease the parchment, as well. Set aside.
- Prepare the caramelized bananas: Place the sugar and water in a medium saucepan. Cook over medium-high heat, shaking the pan as needed, until an amber caramel forms, 6–8 minutes. Immediately pour the caramel into the prepared cake pan.
- Slice each banana lengthwise evenly into 3 pieces. Arrange the slices, cut side down, in a spiral pattern on top of the caramel in the cake pan. Set aside.
- Make the batter: Mash the ripe bananas in a large bowl using a potato masher or fork. Add the eggs, sugar, yogurt, and vanilla. Whisk until well combined. Sift in the flour, baking powder, cinnamon, and salt. Using a rubber spatula, mix together until no flour streaks remain. Stir in the melted butter until the batter is smooth.
- Pour the batter evenly over the bananas in the cake pan. Transfer the pan to the preheated oven, and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 5 minutes. Carefully invert the cake onto a serving plate. Remove the parchment paper, and serve your delicious caramel banana cake.
