Caramelized bananas

  • ½ cup sugar
  • 2 tablespoons water
  • 3 large bananas

Batter

  • 4 ripe medium bananas
  • 2 large eggs
  • 1 cup sugar
  • ½ cup plain whole-milk Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¾ cup unsalted butter, melted, plus more for greasing pan

Preparation

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan with unsalted butter, then line it with parchment paper, and grease the parchment, as well. Set aside.
  2. Prepare the caramelized bananas: Place the sugar and water in a medium saucepan. Cook over medium-high heat, shaking the pan as needed, until an amber caramel forms, 6–8 minutes. Immediately pour the caramel into the prepared cake pan.
  3. Slice each banana lengthwise evenly into 3 pieces. Arrange the slices, cut side down, in a spiral pattern on top of the caramel in the cake pan. Set aside.
  4. Make the batter: Mash the ripe bananas in a large bowl using a potato masher or fork. Add the eggs, sugar, yogurt, and vanilla. Whisk until well combined. Sift in the flour, baking powder, cinnamon, and salt. Using a rubber spatula, mix together until no flour streaks remain. Stir in the melted butter until the batter is smooth.
  5. Pour the batter evenly over the bananas in the cake pan. Transfer the pan to the preheated oven, and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for about 5 minutes. Carefully invert the cake onto a serving plate. Remove the parchment paper, and serve your delicious caramel banana cake.
