Candied Bacon, Egg, and Cheese

Bacon candied with brown sugar and pepper elevates this simple egg sandwich, while still being completely achievable on a regular weekday as the bacon can be made ahead of time. It’s all sandwiched on a toasted Thomas’® Plain Bagel with fluffy eggs and melted cheese for a cozy breakfast.

Candied Bacon, Egg, and Cheese

Ingredients

for 4 servings

Candied Bacon:

  • 4 Thomas’® Plain Bagels, toasted and halved
  • 8 slices thick-cut bacon, halved lengthwise
  • ⅓ cup packed light brown sugar
  • 1 tablespoon freshly ground black pepper

Sandwich:

  • 8 large eggs
  • ¼ cup half-and-half
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon unsalted butter
  • 4 American cheese slices

Preparation

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Arrange the bacon in a single layer on the prepared baking sheet. In a small bowl, mix together the brown sugar and black pepper until well combined. Sprinkle the mixture over the bacon. Bake for 10 minutes, or until crispy.
  3. Meanwhile, make the scrambled eggs: In a large bowl, whisk together the eggs, half-and-half, salt, and pepper until well combined. Heat a medium skillet over medium heat. Add the butter, swirling to coat the bottom of the skillet. Add the egg mixture and cook, stirring and folding occasionally, for about 5 minutes, or until cooked through. Divide the scrambled eggs into 4 equal portions in the skillet. Top each portion with a slice of American cheese.
  4. Remove the bacon from the oven and set aside until cool enough to handle. Add 2 bacon strips to the bottom half of each toasted Thomas’® Plain Bagel, then top with an egg-cheese portion. Cover with the top half of each toasted Thomas’® Plain Bagel.
