Ingredients

- 2 large eggs
- salt, to taste
- pepper, to taste
- cooking spray
- 1 bread slouse, cut in half
- 1 green cabbage leaf
- 1 Spam slice
- kewpie mayonnaise, optional
- Sriracha, optional
- furikake, optional

Preparation
- In a bowl, whisk together the eggs until combined. Season with salt and pepper. Set aside.
- Heat a medium pan over medium heat. Coat with cooking spray. Add the eggs, and do not stir. Immediately dip the bread halves in the eggs, then flip the bread, and dip again. Place the bread pieces on top of the eggs, being careful not to disturb the eggs.
- Once the bottom of the eggs are cooked and opaque, about 2 minutes, flip the eggs over so the bread is on the bottom and the eggs are open on top. Layer on the cabbage, Spam, and optional toppings like mayo, Sriracha, and furikake.
- Once the bread is toasted, about 1 minute, fold in the edges of the egg, and fold the sandwich in half so the bread is on both outer sides. Serve immediately.
