Ingredients

Firecracker Marinade

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon chili paste (such as sambal oelek)
  • 1 tablespoon sriracha
  • 1 teaspoon grated fresh ginger
  • 3 cloves garlics, minced

Salmon Skewers

  • 1 lb boneless, skinless salmon, cut into 1½-inch cubes
  • 1 orange bell pepper, cut into 1½-inch pieces
  • 1 green bell pepper, cut into 1½-inch pieces
  • 1 lemon, thinly sliced into rounds, seeds removed

Creamy Chili Drizzle

  • ¼ cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon sriracha
  • Juice of ½ lemon
  • 1 –2 teaspoons water, as needed

For Serving

  • 2 cups cooked jasmine rice
  • ½ large cucumber, thinly sliced
  • 1 tablespoon toasted white sesame seeds
  • 1 tablespoon finely chopped fresh chives

Preparation

  1. Soak 4 wooden skewers in water for 10 minutes.
  2. Make the firecracker marinade: In a medium glass bowl, whisk together the soy sauce, brown sugar, chili paste, Sriracha, ginger, and garlic until fully combined.
  3. Make the salmon skewers: Add the salmon cubes to the marinade in the bowl, and gently toss using a silicone spatula to coat evenly. Let marinate for 10 minutes.
  4. Thread the marinated salmon, bell pepper pieces, and lemon rounds alternately onto 4 skewers, using 4–5 salmon pieces per skewer.
  5. Preheat an air fryer to 400°F (200°C). Arrange the skewers in a single layer in the air fryer basket. Cook for 12–15 minutes, until the salmon is cooked through and lightly charred at the edges, flipping the skewers halfway through the cook time.
  6. While the skewers cook, make the creamy chili drizzle: In a small glass bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lemon juice.
  7. To serve, divide the cooked rice and cucumber slices evenly among plates. Place the cooked skewers on top. Drizzle generously with the creamy chili sauce, and sprinkle evenly with the sesame seeds and chives.
