Ingredients

  • ¼ cup avocado oil
  • 50 garlic cloves, minced
  • 4 cups leftover white rice, chilled
  • ½ teaspoon msg
  • 2 tablespoons low-sodium soy sauce
  • 2 scallions, thinly sliced (optional)

Preparation

  1. Heat avocado oil in a large nonstick pan or wok over medium-high heat.
  2. Add the minced garlic and cook, stirring often, until golden brown and crunchy, about 3-4 minutes.
  3. Remove the crispy garlic from the pan, leaving the garlic-infused oil in the pan.
  4. Increase the heat to high and add the chilled rice. Break up clumps with a spoon and toss in the oil. Continue to cook for 4-5 minutes, until rice is fried and no large chunks remain.
  5. Remove from heat and add in the reserved crispy garlic, MSG, soy sauce, and scallions (if using). Toss to combine.
