- 50 garlic cloves
- 1 cup oil
- 1 cup blanched almonds, chopped
- 1 cup cashews, chopped
- 1 ½ cups sugar
- ⅓ cup water
- ¼ cup corn syrup
- 2 tablespoons unsalted butter
- ½ teaspoon salt
- ½ teaspoon baking soda

Preparation
- Line a quarter baking sheet pan with parchment paper. Place a fine-mesh strainer over a large heatproof bowl and set aside.
- Using a chef's knife, roughly chop the garlic cloves.
- In a small pot, add the chopped garlic and oil. Place over medium-high heat and cook, stirring frequently, for 2-3 minutes, until the garlic begins to bubble steadily. Continue cooking, stirring frequently and scraping down the sides and bottom, for 5-7 minutes more, until the garlic turns pale golden brown. Immediately pour the roasted garlic-oil mixture into the strainer set over the bowl.
- Combine the roasted garlic, almonds, and cashews in a large bowl; toss until the nuts are evenly coated with the garlic. Set aside.
- In a small pot over medium heat, add the sugar, water, and corn syrup. Attach a candy thermometer to the side of the pot and bring to a boil; do not stir. Once the temperature reaches 233ºF (112ºC), stir in the butter and salt. Continue cooking for about 10 minutes, or until the temperature reaches 300ºF (150ºC) for the hard crack stage. Add the nut mixture and mix together quickly.
- Add the baking soda and stir. The mixture will foam vigorously.
- Immediately pour the hot sugar mixture onto the prepared baking sheet.
- Allow the brittle to cool until firm, then break into pieces.
